Morello cherries are the cousins of sweet cherries. They are plump, bright red juicy fruits with soft, sour flesh. For this reason, they are mostly used in tarts, jams and to make cherry brandy. But their acidity also makes them a good match for quail, guinea fowl, duck and even ostrich!
