A few weeks before harvest, the tea bushes are covered to protect them from direct sunlight. This slows down the plant's growth and gives the tea a more mellow taste. The young tea leaves (called 'tencha') are then dried and ground into a very fine, pale green powder: matcha.

Matcha is a fine powder of high-quality green tea, traditionally used for the tea ceremony in Japan. It comes from the highest quality of camellia and special care is taken in its cultivation. In fact, matcha is more than simply tea, it's a superfood. Historically, it was considered by the samurai as a medicine due to its high catechin content, an antioxidant.
